- 1 litre full-cream milk

- 3-4 green cardamom pods
- Chopped almonds
- Chopped pistachios
- Cashews
- A small amount of ghee
- Saffron strands, optional
The quantity of sugar can be adjusted depending on how sweet you prefer your rabri.
How to Prepare Lauki for the Rabri
Begin by washing and peeling the bottle gourd properly.
Cut it into pieces and check the inside before using it. Remove the soft centre and larger seeds if necessary, and then grate the remaining lauki.
Gently squeeze out excess water from the grated bottle gourd. Do not press it excessively; the purpose is simply to remove unnecessary moisture.
Heat a little ghee in a heavy-bottomed pan and add the grated lauki.
Cook it over medium heat for a few minutes until the raw smell begins to disappear and the vegetable softens slightly.
Reduce the Full-Cream Milk
Take another heavy-bottomed pan and bring the full-cream milk to a boil.
Once it starts boiling, reduce the flame and allow it to simmer.
Keep stirring at regular intervals so that the milk does not stick to the bottom of the pan. As a layer of cream forms on the sides, gently scrape it back into the milk.
Continue cooking until the milk reduces and becomes noticeably thicker.
This slow reduction is what gives homemade rabri its rich and creamy consistency.
Add Lauki and Mawa
Once the milk has thickened sufficiently, add the cooked grated bottle gourd.
Mix everything thoroughly and continue cooking over low to medium heat.
Now crumble the mawa and add it to the mixture. Stir continuously so that the khoya blends smoothly with the milk and lauki.
Cook until the mixture becomes thick, creamy and well combined.
Add sugar according to taste and continue stirring. Remember that adding sugar can make the mixture slightly thinner initially, so allow it to cook for a few more minutes until the desired rabri consistency returns.
Add Cardamom and Dry Fruits
Crush the green cardamom seeds into a fine powder and add them to the rabri.
Next, add chopped almonds, pistachios and cashews. If you want to make the dessert even more festive, a few saffron strands can also be added.
Cook everything together briefly before switching off the heat.
